The traditional recipe is made with a single mashed potato and sauerkraut, lettuce, kale, spinach, green turnips, or carrots and onions, and is a dish eaten primarily in the cold winter months.

It is made from pork, beef or poultry, often mixed with wheat flour or soy flour. In the Netherlands, it is also fried with horse meat and sold in fast food restaurants.
